Title: Sunday Night Scrambler

Yield: 6 Servings

1/3cButter, margarine or
  Bacon drippings
3/4cChopped onions
2cCooked diced potatoes
12 Eggs, slightly beaten
3/4tsItalian seasoning
1 1/4tsSalt
1/8tsPepper
8ozPlain yogurt
1/2cShredded swiss cheese

1) Saute onion and potatoes in 3 tablespoons butter in large skillet. Remove. 2)Add remaining butter to skillet. Blend eggs, Italian seasoning, salt, pepper and yogurt. Pour egg mixture into skillet and cook over low to meduim heat, stirring gently. 3) Just before eggs set, stir in onions and potatoes. Remove from heat. Sprinkle cheese over top and serve.
